Early Career and Move to England
Mavropanos spent eight years at Apollon Smyrnis prior to his 2016 move to PAS Giannina. He debuted in the Greek Cup on 29 November 2016 and eventually scored three goals in 23 appearances. His performance in Greece attracted Arsenal, who secured his signature for €2.1 million in January 2018. He made his Premier League debut against Manchester United that April.

Seeking consistent match time, he joined 2. Bundesliga side 1. FC Nürnberg on loan in January 2020. This was followed by a move to VfB Stuttgart in July 2020. During his tenure at Stuttgart, which became permanent in 2022, Mavropanos became noted for his attacking contributions, scoring four goals during the 2021-2022 Bundesliga season, helping the club avoid relegation.
Tenure at West Ham United
In August 2023, West Ham United signed Mavropanos for a €25 million fee, marking his return to the Premier League as the first Greek player in the club's history. He proved impactful during the 2025-26 season, scoring four Premier League goals and earning the Hammer of the Year award from supporters following a series of influential defensive and offensive displays.
International Representation
Mavropanos received his first senior international call-up in March 2021 under coach John van 't Schip. He made his debut against Honduras on 28 March 2021.
