Kahn moved into directing feature films, gaining notice for his ability to adapt literary source material into cinematic narratives. His 1998 work L'Ennui was based on a novel regarding the concept of boredom. He followed this with his 2001 film Roberto Succo, which secured an entry into the Cannes Film Festival. In 2004, he directed Red Lights, a production based on a novel written by Georges Simenon.

Beyond his primary role as a director, Kahn has contributed to the French film industry as a screenwriter, film editor, and actor. His editing credits include the 1993 work L'Exposé. His later directorial work includes The Prayer, released in 2018, and The Goldman Case, which premiered in 2023. In December 2023, he joined 50 other filmmakers in signing an open letter published in Libération advocating for a ceasefire and the establishment of a humanitarian corridor in the Gaza Strip.
