Significant breakthroughs in geometry marked his collaboration with colleagues Gérard Besson and Pierre Bérard. In 1985, the group formulated a version of the isoperimetric inequality for Riemannian manifolds that incorporated both diameter and Ricci curvature. Further collaborative work in 1995 with Besson and Gilles Courtois led to the identification of a Chebyshev inequality concerning the minimal entropy of locally symmetrical spaces characterized by negative curvature. This discovery provided a simplified proof for the Mostow rigidity theorem, a result now categorized as minimal entropy rigidity.

Gallot authored several foundational texts and papers. Notable works include the textbook Riemannian Geometry, co-authored with Dominique Hulin and Jacques Lafontaine, which reached its third edition in 2004 via Springer Verlag. Pures Appliqués, as well as his 1988 work on analytical isoperimetric inequalities published in Astérisque.
