Lee built his career as an entrepreneur and banker, eventually overseeing several major entities. The Lee Shau Kee Foundation facilitated significant contributions to education and social infrastructure. Notable donations included HK$500 million to the University of Hong Kong and HK$400 million to the Hong Kong University of Science and Technology in 2007. In 2018, he provided HK$100 million to Hang Seng Management College. He also supported the HKICC Lee Shau Kee School of Creativity and donated land in Yuen Long to Po Leung Kuk for the construction of a large-scale youth hostel project.

Lee was born in 1929 in the Shunde District of China. He was a father to five children and a grandfather to eight.
