Her mainstream breakthrough occurred in 1968, replacing Mia Farrow in The Detective and starring in The Sweet Ride, which earned her a Golden Globe nomination for Most Promising Newcomer. Throughout the 1970s, Bisset participated in numerous high-profile projects. Notable credits include the disaster film Airport (1970) and The Mephisto Waltz (1971). Her commitment to diverse roles led her to France, where she worked on the film Day for Night (1973), as well as Le Magnifique (1973) alongside Jean-Paul Belmondo. She also appeared in the success Murder on the Orient Express (1974) and the Italian production The Sunday Woman (1975). Her role in the 1977 production The Deep gained significant publicity, though Bisset expressed concern that promotional emphasis on her costume overshadowed the film's technical production.

Bisset’s career continued through the 1980s, 1990s, and into the 21st century with roles in Rich and Famous (1981), Class (1983), and the television miniseries Joan of Arc (1999). Her performance in the 2013 BBC miniseries Dancing on the Edge secured a Golden Globe Award for Best Supporting Actress.
