Early Career and European Entry
Born in Jos on 12 July 1995, Simon was a product of the GBS Academy. His professional trajectory initially involved a pre-contractual agreement with Ajax in 2013, though the Dutch club ultimately opted not to sign him. He joined the Slovakian side AS Trenčín in January 2014, making his league debut in a draw against MFK Košice. During his time in Slovakia, he made an impact in the UEFA Europa League, scoring a hat trick during his debut in a 4-0 win against Vojvodina Novi Sad.

In January 2015, Gent secured Simon on a three-year contract. He debuted against Royal Mouscron-Péruwelz shortly after, and by February, he had earned recognition as the Belgian league player of the week following a hat trick against Sporting Lokeren. His performances were instrumental in securing the 2014-15 Belgian Pro League title, the first such honor in Gent's history. He further contributed to the team's success by assisting the winning goal in the 2015 Belgian Super Cup.
Tenure at Nantes and International Duty
Simon transitioned to Spanish side Levante in 2018 before moving to Nantes on loan in 2019, a move that became permanent the following year. During his tenure, he achieved 200 appearances for the club in May 2025. Internationally, he made his Nigeria debut in March 2015 under Daniel Amokachi. He has since represented his country in multiple Africa Cup of Nations tournaments and earned recognition as a Member of the Order of the Niger.
